The Story

A North Wales brewery in Mold, founded in 2018 and among the most highly rated in the UK. Its gluten-free pale, Pine, is brewed gluten-free in house rather than from substitute grains: wheat left out, a fungal endopeptidase enzyme, and a longer boil to cut the protein load. Independent UKAS-accredited lab testing puts it below 10ppm, retested every six months. The beer itself is built on Idaho 7 and Mosaic, tropical and fruit-forward with the dank, resinous pine finish that gives it its name.

GF approach: Pine is brewed gluten-free by Polly's, not from alternative grains. Wheat is left out, and the recipe uses a fungal endopeptidase enzyme, Murphy & Son's Brewers Clarity, with an extended 60-minute boil to lower the protein load and help the enzyme work. The grain bill is 95% extra pale malt and 5% malted oats. Every batch is tested at an independent UKAS-accredited lab and repeatably comes back below 10ppm, the lab's limit of quantification, comfortably under the 20ppm gluten-free threshold. The recipe passed three sequential tests before launch and is retested every six months, with any recipe change triggering three fresh tests, so it is kept deliberately stable.
